We harvest only cherries at their optimal point of ripeness — with the correct Brix value — avoiding unripe and overripe fruit.
Traditional wet processing with controlled fermentation and even drying. Mechanical dry milling sorts by density and size — screen size above 14/16 — and produces green coffee with 11.5–12.5% moisture.
